First Impressions & Vibe
“Namara Umai! Sushidō Shimbashi,” an authentic sushi restaurant led by the head chef of Azabu’s Sushigokoro, will open in Shimbashi on May 30, 2025.
The interior is refined yet casual, with a counter-focused layout that’s welcoming even for first-time visitors. The reasonably priced omakase course comes with an all-you-can-drink option, making it perfect for a first “Ginza sushi” experience, as well as dinners with friends or a date.
The Course
The all-you-can-drink omakase is ¥11,000 (tax included). It features 14 courses, starting with small appetizers, and every daily-recommended topping is excellent. The balance between the nigiri rice (shari) and toppings (neta) feels just right, and the sense of harmony deepens as you make your way through the meal.






Sake Pairing Highlights
From crisp ginjō styles to umami-forward kimoto and yamahai, the pairings moved with the menu: delicate aromatics for white fish and shellfish, deeper structure for fatty cuts and seasoned neta.
